Lemon/Lime Super Juice

What you’ll need:

  • Lemon peels (200+ grams, depending on size of batch)
  • Lime peels (200+ grams, depending on size of batch)
  • Citrus peeler
  • Hummus container for peels
  • Citric acid
  • Malic acid (only in lime juice)
  • Coffee scale from up front

  1. Wash all your fruit
  2. Peel all fruit into individual hummus containers
  3. Set fruit aside to juice later
  4. Weigh your peels
  5. Subtract hummus container weight from total (~52.4grams)
    • ***lime gets citric AND malic acid***
    • ***lemon ONLY gets CITRIC acid***
  6. Enter peel weight into the super juice calculator below
  7. Add said amounts of acid(s) to each bowl
  8. Seal with lid and shake containers to make sure acid is dispersed evenly
  9. shake containers every 30 minutes for a minimum of 2 hours
  10. While waiting for peels to produce oils, juice lemons and limes into separate containers and set aside

Water Conversion: when entering your peel weights it’ll tell you how much water you’ll need for your specific recipe. (ex: 3758.21 ml would equal ~3.75 liters)

Blend together peel concoction & the juice from your fruit that you set aside with water, in several batches – allowing each batch to blend for about 45 seconds. Pour into cheese cloth after blending and squeeze/drain liquid from cheese cloth.
